Ok this week was super low-key and I barely took any pictures. Ty had a fever and my husband and I started getting sick as well.

MONDAY
AM - Park meetup, Red Box
Noon - Picked up B, lunch at Chick-fil-a play area (always a hit!)
PM - Played outside most of the afternoon

I put together a RED box.



















Ty had fun with the red chip clip, trying to pinch the red puff. He did a great job.






TUESDAY
AM - Meetup playdate at our house
PM - Long nap, Park

WEDNESDAY
AM - Storytime Easter egg hunt
PM - Went shopping for egg fillers, Played in the amazing box of Easter Eggs


THURSDAY
AM - Went to my sister's house to play with her puppy Trigger
PM - Poppy came over to play while I went grocery shopping (becuase I wasnt about to take a toddler with fever and try and shop!)

Like I said, it was a VERY low-key week. Next week is BLUE week and I am planning to do a lot of new things!!

My Week in Pictures

Egg Pops

I read this super simple recipe for breakfast or brunch on BabyCenter in one of my birth boards.

items needed:

lunch meat ham
shredded cheese
eggs

directions:

Cut the ham into little pieces.
Spray muffin tin with Pam.
Sprinkle ham and cheese into mini muffin tin.


Whip 4-6 eggs together and pour into muffin tin, filling on 3/4 full.
Bake at 350 degrees for 10-15 minutes.

Egg pops should "pop" out of the tins all by themselves.




Italian Crockpot Chicken My Way

This meal is super easy!!

items needed:


8 - 10 frozen chicken tenders
8 oz. cream cheese
1 can cream of chicken soup
1/2 cup Italian salad dressing

directions:


Throw the chicken into the crockpot still frozen!

Mix together the cream cheese, chicken soup, and Italian dressing. Pour on top of chicken.



Place the lid on and cook on low for 4-5 hours.

Serve over rice or mashed potatoes or both!

Meatloaf My Way

I'm not sure where I originally got this recipe, but I halfed the whole thing. It made too much. This amount leaves leftovers for all three of us still!

items needed:

1 tablespoon dried onion flakes
1/8 cup light zesty Italian reduced fat dressing (ha I forgot to take a picture with the correct dressing!!)
1 pound ground beef
ketchup
chicken stuffing mix
1/2 cup water
1 egg white
shredded cheese

directions:


Preheat oven to 375 degrees.
Beat together ground beef, 1/8 cup of ketchup, onion flakes, 1/8 cup Italian dressing, half of the chicken stuffing mix, water, egg whites, and a handful of shredded cheese.



Pat into a greased 8x8 baking dish.



Squeeze some ketchup on the top.


Cover with more shredded cheese.


Bake for 45 minutes until edges are browned and crispy.



Serve with instant mashed potatoes and a veggie.

Tot School is only Monday - Thursday in our house. The hubby has off Friday, Saturday & Sunday and so those days are crazy, very productive and never predictable.

MONDAY
AM - Park Meetup, Green Box
Noon - Picked up B - little guy I watch on Mondays & Wednesday
PM - Public Library, Big Machines tot pack

Tot Books & Packs


I pulled out the GREEN box which was full of things I found around the house that were green. The boys liked throwing the balloons at each other. And then Ty used his tractors in the green playdough.




After nap, we went the library and checked out GREEN and tractor books. Ty discovered the children's computer!! and loved to listen to the ReaderRabbit programs.



TUESDAY
AM - Picked tomatoes at Meme's
PM - Music time, Blocks

My mom planted a tomato plant specifically for my tomato loving kiddo! She asked us to come over so that Ty could pick the ripe ones. He loved it and ate them right away!




After lunch and nap, I pulled out the music basket full of instruments. We made lovely music and listened to some also.




When Ty got bored with the music, I pulled out the blocks. This was the first time he was interested in doing something with them other than throwing them!


THURSDAY
AM - Storytime at Library with Meetup group
Noon - Picked up B
PM - Big Machines tot pack, painting, dancing



I printed out the Big Machines tot pack from the 1+1+1=1 blog. Ty has enjoyed it a lot. He is obsessed with tractors anyways so incorporating counting and colors with them was great! This day I layed out the number cards in order and had Ty and B help match the correct numbered block to each. They both got the hang of it and wanted to do it once again.

The boys danced for a good few minutes after snack to Toddler Radio & Sesame Street channels on Pandora. They LOVED hearing the music come from my iPhone!

We read books DAILY and more than once during each day. Ty has always been in love with reading. I just thought this picture was cute of him reading in a "big boy" chair.

Late afternoon, we went outside and colored with sidewalk chalk.

THURSDAY
AM - Oatmeal bowl, Big Machines tot pack
PM - Park with Meme, Blocks at Library, Reading with Daddy



Ty wanted to lay out the number cards in order again and pretended to count them just like I would. He likes to look at all the different machines and try to point out each one I say or say the name if I point to them. Ty did perfect at transferring the oatmeal from one bowl to the other.


My mom and I took Ty to a new-to-Ty park on Thursday and then went to the library afterwards. This library had an awesome block section, but Ty was unsure (or uninterested) in the big blocks. I showed him how to build something and still he found the children's computers.

Each night at bedtime, the hubby and I read GREEN books with Ty.
The three books I checked out this week were :
Goblins in Green by Nicholas Heller
There's an Alligator Under My Bed by Mercer Mayer **Ty's all-time favorite book!!
Green Eggs and Ham by Dr. Seuss
I was only able to grab these three because I had TWO crazy boys with me on Monday!

Shepard's Pie My Way

Shepard's Pie

This dinner is fast and cheap!

items needed:


1 lb. ground beef
2 packets of instant mashed potatoes
1 can beef gravy
frozen microwavable veggie mix
shredded cheese

directions:

Heat oven to 350 degrees.
Brown ground beef and drain off grease. (I always wipe the skillet too - just to get off as much grease as I can.)
While browning, microwave the veggies per package directions.
Mix the veggies into the drained beef.
Stir in the gravy to beef & veggie mixture.
Cook the mashed potatoes per package directions.
Poor the beef mixture into a 8x8 baking dish.
Spoon the potatoes on top of the beef mixture.




Bake for 10 - 15 minutes.
While baking, shred your cheese. I always buy a cheese block and grade it myself - WAY CHEAPER!!


Sprinkle the cheese on top of potatoes and bake for a couple more minutes, just to melt the cheese.


Serve with wheat rolls left over from Ham & Beans dinner night.


Broiled Greek Chicken with Pitas

Broiled Greek Chicken with Pitas (my way) - from All You magazine

items needed

1/4 cup olive oil
2 cloves of garlic, finely chopped
salt and pepper
1 1/2 lb. boneless, skinless chicken breasts
2 cucumbers, peeled, cut into 1/4 inch strips
skewers
1 cup plain Greek-style yogurt
1 cup cherry tomatoes, halved
wheat flatbread

directions

If you are using, wooden skewers, soak them ahead of time.


Preheat broiler to medium. Place rack 4 inches from heat source.
Line a rimmed baking sheet with foil.
Cut the chicken breasts into 1 inch pieces.


Combine oil, garlic and 1 teaspoon salt in a large Ziploc bag.


Add chicken, seal and toss to coat. Set aside while broiler heats.


In a medium bowl, mix cucumbers and yogurt, season with salt and pepper. Slice the cherry tomatoes.



Thread the chicken onto the skewers. Place on baking sheet.


Broil for 12 - 15 minutes, turning once, until chicken is cooked through. I, of course didn't let the skewers soak long enough AND set my broiler to high so my skewers end got burnt!
Serve with cucumbers, tomatoes and flatbread.

This was our first week of Tot School. I found the blog 1+1+1=1, Tot School a few months ago and fell in love with the idea!! I wanted to start "teaching" Ty early childhood things but didn't want it to me too structured. I will post the things we do for Tot School on my blog here and will link up with 1+1+1=1's posts as well.

Ty loved to thread the beads onto the pipe cleaner.


We also did some pouring for more motor skills. He did this with both his left and right hand. I let him try it on his kid table, so he could stand, in the kitchen, but if he spilled the beads they would go everywhere. I would suggest doing this over carpet for easier clean up.

I also tried to get him to sort the beads by color, but he was not interested at all!!


We pulled out his Color Wonder fingerpaints by Crayola. These are so nice because there really is no mess to clean up.



Ty got bored with the no-mess painting real fast so I pulled out the real finger paints and let him go to town. He loved using the paintbrush! Using his hands was just as fun.

I used Crayola's Washable Kid's Paint this day. It comes with 10 different colors and is in perfect sizes.


My husband and I took Ty to Bass Pro Shop for some exploration! Ty loved looking at all the animals and fish. He like to see all the fishing poles and guns. Ty is around these things all the time but seeing so many in ONE place was exciting for him! This was a fun, FREE trip for all of us.

I love his concentration!
